TLDR SEGA announced via the official Sonic the Hedgehog Twitter account that there will be a special digital livestream event this week. The "Sonic Central" celebration is scheduled for Thursday, May 27 at 9:00 am PT. The celebration will feature "a first look at some projects, partnerships, and events," SEGA tweeted. SEGA announced via the official Sonic the Hedgehog Twitter account that there will be a special digital livestream event for the Sonic the Hedgehog 30th Anniversary celebration this week.
The "Sonic Central" celebration is scheduled for Thursday, May 27 at 9:00 am PT. The livestream will be available on YouTube.com/sonic or Twitch.com/sonic. The tweet noted that the celebration will feature "a first look at some projects, partnerships, and events."
In terms of new projects, it will be interesting to see if a new mainline Sonic the Hedgehog game is coming out.
As noted, last February, Paramount Pictures dropped the title announcement video for Sonic the Hedgehog 2, the upcoming sequel to the hit live-action movie based on the iconic video game franchise.  The movie currently has an April 8, 2022 release date, director Jeff Fowler announced that the film wrapped shooting in Vancouver earlier this month.
It would very much make sense if there were some new reveals for the upcoming sequel during the livestream this week as the announcement did mention partnerships.

Additionally, Netflix is working on a new Sonic the Hedgehog animated series called Sonic Prime. Sonic Prime is also expected to debut later next year. It's being animated by WildBrain's Vancouver Studio, with Man of Action Entertainment serving as showrunners and executive producers. So, it would also make sense if new material is revealed for that upcoming series as well.
